This Moroccan ground beef kebab is packed with warm spices, herbs, and aromatics, then grilled or baked to juicy, charred perfection. Ideal for a weeknight dinner or a crowd-pleasing cookout, these kebabs bring bold flavor with minimal effort.

Ground Beef Kebab Mixture:

  • 1 lb (500 g) ground beef (about 25% fat, 75% lean)
  • 1 cup finely chopped onion
  • 4 garlic cloves, finely minced
  • 3-inch piece fresh ginger, grated
  • ¼ teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika (or cayenne for heat)
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 cup chopped fresh herbs (parsley, cilantro, mint mix)
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons dry breadcrumbs (optional for a softer texture)

To Cook & Serve:

  • 8–10 bamboo skewers, soaked for 30 minutes
  • ¼ cup neutral cooking oil (for brushing grill and kebabs)

Instructions

  1. Mix and Pulse:
    Combine all ingredients in a large bowl. Mix well. Pulse the mixture in a food processor 8–10 times until slightly sticky and cohesive. Rest for 15–30 minutes (or overnight in the fridge).
  2. Shape Kebabs:
    Wet your hands. Take about ⅓ cup of mixture, roll into a sausage shape, and mold around a skewer with light finger indentations. Repeat and chill the skewers while you heat the grill or oven.
  3. Grill Method:
    Preheat grill to medium-high and oil the grates. Grill kebabs for 4–5 minutes per side until lightly charred and internal temperature reaches 160°F (71°C). Let rest a few minutes before serving.
  4. Oven Method:
    Preheat oven to 400°F (200°C). Place skewers on an oiled wire rack over a foil-lined tray. Bake for 10–13 minutes, turning halfway. Broil 1–2 minutes at the end for color if desired.

Notes

  • Use beef with 20–25% fat for juicier kebabs.
  • Avoid over-processing onion or herbs to prevent excess moisture.
  • Chill shaped kebabs before cooking for better hold.
  • Breadcrumbs are optional but help bind and soften the mix if needed.
