Ingredients

Scale
  • 1 kg (2.2 lbs) chicken thighs, bone-in or boneless
  • 1 tablespoon curry powder
  • 1 teaspoon dried thyme
  • 1 teaspoon parsley (dried or fresh)
  • 1 medium onion, chopped
  • 1 teaspoon garlic granules or 3 cloves fresh garlic, minced
  • ¼ teaspoon black pepper
  • Salt to taste
  • Water to cover (approximately 6-8 cups)
  • 1–2 chicken bouillon cubes (optional)

Instructions

  1. Pat chicken thighs dry and arrange in a large pot in a single layer.
  2. Add curry powder, thyme, parsley, garlic, chopped onion, black pepper, salt, and bouillon if using directly to the pot with the chicken.
  3. Pour cold water over the chicken until covered by at least 2 inches.
  4. Place pot over medium heat and bring to a boil, then reduce heat to maintain a gentle simmer.
  5. Cover pot partially and simmer for 20-25 minutes for bone-in thighs or 15-18 minutes for boneless thighs.
  6. Check internal temperature reaches 165°F with an instant-read thermometer.
  7. Turn off heat and let chicken rest in the hot liquid for 5 minutes.
  8. Remove chicken from broth and use immediately or cool for storage.
  9. Strain and save the cooking liquid for homemade chicken stock.

Notes

  • Start chicken in cold water, not boiling water, for even cooking
  • Maintain a gentle simmer, not a rolling boil, for tender meat
  • Add 50% more cooking time if starting from frozen
  • Store cooked chicken in airtight containers for up to 4 days refrigerated or 3 months frozen
  • Use the resulting chicken stock within 5 days or freeze for up to 6 months
