Description

This homemade doner kebab recipe brings authentic Turkish street food flavor into your kitchen using ground lamb, rich spices, and a simple oven method. Perfect for wraps, plates, or party platters.


Ingredients

  • 500g minced lamb
  • 1 onion, pureed and strained (use only the pulp)
  • 50g plain yogurt
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp black pepper

Instructions

  1. Prepare the Onion:
    Puree the onion and strain it through a fine mesh sieve or cloth to remove the liquid. Keep the pulp, discard the juice.

  2. Mix the Meat:
    In a large bowl, combine onion pulp, minced lamb, yogurt, olive oil, garlic, and all spices. Mix well by hand until the mixture is sticky and cohesive.

  3. Shape the Log:
    Spread the mixture into a rectangle on baking paper. Place another sheet on top and roll into a tight log. Twist the ends to seal.

  4. Bake the Kebab:
    Preheat the oven to 180°C (356°F). Place the log on a baking tray and bake for 8–10 minutes until cooked through.

  5. Rest and Slice:
    Let rest for 5 minutes, unwrap the paper, and slice thinly into doner-style strips.

  6. Serve:
    Serve in flatbread or wraps with yogurt garlic sauce, lettuce, red cabbage, tomato, cucumber, and sumac onions.

Notes

  • You can swap the lamb for minced beef or chicken thighs.
  • For sauces, try garlic yogurt, herbed yogurt, or mild chili sauce.
