- 1 cup water (½ cup hot, ½ cup cold)
- 1 tbsp unflavored gelatin powder (like Knox gelatin or grass-fed gelatin)
- 1–2 tsp fresh lemon juice or apple cider vinegar (for flavor and digestion)
- 1 tsp monk fruit, stevia, or honey (your preferred sweetener)
Instructions
- Heat ½ cup of water until steaming, then pour into a heat-safe mug or bowl.
- Sprinkle gelatin powder into the hot water while stirring constantly. Mix until fully dissolved. Some foam is normal.
- Stir in lemon juice or apple cider vinegar and your sweetener of choice.
- Add the cold ½ cup of water to quickly cool the mixture.
- Pour into a silicone mold or glass dish and refrigerate for at least 2 hours until set.
- Once firm, cut into cubes and store in an airtight container in the fridge for up to 5 days.
Notes
- Eat 2–4 cubes 15–30 minutes before meals or at snack time.
- Never skip the chilling step—this gives the gelatin its fullness effect.
- Avoid raw pineapple or kiwi; their enzymes prevent proper setting.
