Description
A wholesome and satisfying bowl featuring omega-3-rich salmon, nutty brown rice, and crisp steamed broccoli, perfect for a nutritious meal.
Ingredients
- Salmon fillets – 4 (6-ounce) pieces
- Brown rice – 2 cups, uncooked
- Broccoli florets – 4 cups
- Olive oil – 2 tablespoons
- Garlic, minced – 3 cloves
- Lemon juice – 2 tablespoons
- Soy sauce – 2 tablespoons
- Honey – 1 tablespoon
- Salt and black pepper – to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium saucepan, bring 4 cups of water to a boil. Add the brown rice, reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed. Fluff the cooked rice with a fork and set aside.
- While the rice is cooking, prepare the broccoli. In a steamer basket or saucepan with a small amount of water, steam the broccoli florets for 5-7 minutes, or until they are tender yet still crisp. Drain the broccoli and set aside.
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, soy sauce, and honey. Add salt and black pepper to taste.
- Line a baking sheet with parchment paper or aluminum foil. Place the salmon fillets on the prepared baking sheet and brush the top of each fillet with the garlic-lemon-soy sauce mixture.
- Bake the salmon in the preheated oven for 12-15 minutes, or until fully cooked and flakes easily with a fork.
- To assemble the Salmon and Brown Rice Bowls, divide the cooked brown rice evenly among four serving bowls. Top each portion of rice with a baked salmon fillet and steamed broccoli florets.
- Drizzle any remaining garlic-lemon-soy sauce mixture over the top of the bowls, ensuring each serving is evenly coated.
- Serve warm, garnished with additional lemon wedges or chopped fresh herbs, if desired.
Notes
- Freshness: Choose fresh, high-quality salmon fillets for the best flavor and texture.
- Cooking Tips: Be careful not to overcook the broccoli to retain a crisp-tender texture.
- Sauce Adjustment: Adjust the amount of soy sauce and honey based on your personal taste preferences.
- Toppings: Consider adding toasted sesame seeds or a drizzle of toasted sesame oil for extra flavor.
- Greens: You can incorporate additional greens, such as baby spinach or arugula, into the bowl for added nutrients.
